I talked to Lori this morning. I wanted to get an earthquake report from her. She said they got a good shaking in Walnut Creek, but not the rolling kind of quake some people reported.
We decided to go back to Guaranty RV for lunch. We were glad we didn’t wait another day or two, because Rich and Tony were packing up Tony’s Traveling Kitchen, and going to another job after they finished serving today’s lunch. Someone else will be in their spot for awhile.
(Tony is the chief cook. Her dad wanted a boy, so they gave her a boy’s name. Seven years later he left. Does that sound familiar?)
She has a special system that I think is very clever and creative. Ahead of time she cooks, on a grill, the hamburger and chicken patties. She puts them in big electric roasters of sauce...teriyaki for the chicken and au jus for the hamburgers. The sauce gives the meat flavor and keeps it moist. When an order comes in, she puts the meat on her grill, including cheese, bacon and grilled onions (all pre fixed). She can get a burger ready to serve in about a minute. Her husband, Rich, said at a large gathering and with an assistant, he has seen her serve a burger every minute for four hours. She’s little and must be kind of like Mighty Mouse!
I think she has a really efficient person and has it all figured. She also told me her recipe for grilled onions...a little Kosher salt and a little honey for seasoning. They were so good!
We meet such interesting people in our travels. Rich and Tony were perfect examples of that!
When we got back home, I worked at my desk most of the rest of the day! So much to do, so little time!
